HOW to make this AVOCADO EGG SUNDRY SANDWICH FOR BREAKFAST
Make sure to fry the egg from both sides or cook it however you want. If you are able to hard boil some eggs, it’s extremely simple to make this sandwich for several days.

- 4 slices of toasted wheat bread
- 4 oz room temperature cream cheese
- 1 teaspoon chopped fresh parsley
- 1 teaspoon chopped green onion
- 1/8 teaspoon salt
- 1/8 teaspoon of black pepper
- 2 large eggs
- 4 slices tomato
- 1/2 peeled, pitted and cut avocado
Directions
In a small skillet cook bacon on medium-high heat until crisp. Remove bacon from the skillet, and then drain on paper towels. Remove grease from the pan, and reserve 1 tablespoon.
Spread butter on each slice of bread. Place four slices of bread with butter sides up on a pan with medium temperature. Toast the bread on the opposite side. Transfer from serving plates.
A small dish, mix Parsley, cream cheese, and green onions. Sprinkle with salt and black pepper. Spread the mixture on 1 side of each slice of toast.
In the same skillet, make eggs fried in the leftover bacon grease on medium-low heat. Crack the yolks, then flip the eggs. Set the eggs on top of two breadcrumbs. Over each egg, place 2 bacon slices two slices of tomato and two pieces of avocado. Then, top with a second piece of toast, and serve immediately.
